Smoky Beef & Kidney Bean Stew – Mild


In addition to the soup mix, you will need:

2 tbl oil
350g stripped Beef
1 med Brown Onion (optional)
300g Potatoes peeled and diced (optional)
1 litre beef stock
1 x 400g canned tomatoes diced or natural
1 x 250g low fat cooking cream (or use regular cream)

Directions: For best results remove the bagged kidney beans and soak overnight.
In a 4 litre saucepan heat oil. Saute beef and onion (optional) until almost cooked and juicy. Add soup mix, tinned tomatoes and potato (optional) and stir for 2 minutes. Add 1 litre beef stock to saucepan and bring to the boil for 5 minutes. Keep on a medium heat stirring periodically for 45 minutes. Reduce heat and add the cream. Increase the heat again still stirring to mix the ingredients. Ensure the kidney beans have softened and then serve. Great with fresh crusty bread!

Ingredients: Kidney beans, mushroom, onion, potato, carrot, red capsicum, tomato powder, garlic, smoked paprika, herbs and spices. No added salt, preservatives or MSG.

Serves 4

Recipe can be modified by adding more vegetables or stock/water to increase the volume.
